~1 - 2 slices pre-made polenta
~1 - 2 avocadoes
~1 med tomato
~1 yellow pepper
~1/2 sweet onion
~1 jalapeno pepper
~fresh lime juice
Pan fry the polenta in a little olive oil. While the polenta is cooking, mix all the other ingredients in a large bowl. Serve over the hot polenta.
